Cupcakes with Sticky Tops

Why do my cupcakes have sticky tops even after they are completely cooled and before I store them?

Most people have an issue with sticky cupcakes if they’ve stored them in an air tight bag. Usually, letting the cupcakes sit out in the air to breathe takes care of the issue. The reason that your cupcake tops are sticky has to do with the ingredients in the recipe and how the moisture is collecting in the cake. The moisture activity prevents your cupcakes from getting dried out. Most bakers will tell you to ice the top and consider it a blessing since it means the cupcakes will be moist inside, too! However, if you really want to have a dry top, you might try sprinkling some powdered sugar on top. That might help absorb some of the moisture.
