Vanilla Frosting from
Magnolia's Chocolate Cupcake Recipe
- 1 cup (2 sticks) softened unsalted butter
- 6 - 8 cups powdered or confectioner's sugar
- 1/2 cup milk
- 2 tsps vanilla extract
- food coloring of your choice *optional
Step 1: In a large bowl, mix butter with four cups of powdered or confectioner's sugar.
Step 2: Beat 3 - 5 minutes with an electric mixer on medium speed until creamy and smooth.
Step 3: Gradually add remaining sugar one cup at a time mixing well between additions. You may need to add less sugar to maintain spreading consistency.
Step 4: Add food coloring if desired. Mix well.
Frosting Tip: Keep in mind that butter easily softens at room temperature especially if you are working with the ingredients quite a bit. Try to ice your cupcakes as quickly as possible to maintain frosting consistency.
