Valentine Cupcakes

"Be Mine" Valentine Cupcakes
Difficulty Level: Experienced
Bakery/Cake Goods Needed:
- Your favorite batch of chocolate cupcakes
- Your favorite chocolate frosting recipe
- 1/2 cup white butter cream frosting recipe
Red Hearts Decorating Supplies:
- 1 small batch of white premade fondant
(you can use store bought or homemade)
- Metal heart-shaped cutter
(we used the medium 1-1/2" heart cutter from
Wilton's Heart Fondant Cut-outs)
- Pink, Red and Green Food Coloring
(we used Wilton's paste food coloring)
- Small rolling pin
- Wax Paper
- Butter Knife
- Wilton #3 Round Tip
- Icing Bag
Valentine Cupcakes Icing Tools:
- Wilton 1M Star Tip
- Icing Bag
Finishing Touches:
- Red or Brown Cupcake liners and
Red Cupcake Wrappers
Making the "Be Mine" Hearts:
Step 1: Break off a small ball of fondant and color it green. Break off another small ball and color it light pink. Set it aside. Color the remaining fondant red.
Step 2: With a small rolling pin, roll red fondant out on a flat surface to 1/4" thickness. Cut out heart shapes with the medium heart cutter. Set aside shapes on wax paper to harden.
Step 3: Thin the white butter cream with a small amount of milk. Fit an icing bag with the Wilton #3 Round tip and fill with the thinned butter cream. Pipe out the word “Be” on one heart and "Mine" on another heart. Set aside.
Making the Roses:
Step 1: Roll out the pink fondant on a flat surface to approximately 1/8" thickness.
Step 2: With the butter knife, cut into strips about 1/4" wide and 1-1/2" long. Roll strips into coils. Set aside on wax paper to harden. Vary the coils to control the size of the rose you want to make.
Step 3: Break off green fondant into very small balls. Press the balls flat with your thumb and pinch the ends to form a tip. Set aside on wax paper to harden.
Icing the Cupcakes:
Step 1: Fill the icing bag with chocolate butter cream and fit the opening with the Wilton 1M Star metal tip. Pipe a small swirl in the center of the cupcake.
Step 2: Carefully place the red hearts to read "Be Mine" in the center of the chocolate butter cream swirl. Finish the design with a fondant roses and leaves. Your Valentine cupcakes are complete!

XO XO Heart Valentine Cupcakes

Bakery/Cake Goods Needed:
- Your favorite batch of vanilla cupcakes
- Your favorite recipe for vanilla butter cream frosting
Heart Plaque Decoration Supplies:
- Pre-made fondant (homemade or store bought)
- Red and Pink food coloring
(we used Wilton’s paste food colors in Red-Red and Pink)
- Metal heart shaped cutters
(we used the medium 1-1/2" heart cutter from Wilton's Heart
Fondant Cut-outs)
- Metal Alphabet Shaped Cutters
(we used the letters from Wilton’s Fondant Alphabet/Number Cut Outs)
- Any Icing Tube
(don't worry about the opening, you'll be using the other end)
- Drinking Straw
- Small rolling pin
- Food-safe paint brush
Cupcake Icing Tools:
- Wilton 1M Star Tip
- Icing or Pastry Bag
Finishing Touches:
Directions for Making the Heart Plaques:
Step 1: Break off a medium ball of fondant and tint it red. Tint the remaining fondant pink.
Step 2: Roll pink fondant out on a flat surface with the small rolling pin to about 1/4" thickness. Using the heart shaped cutter, cut out hearts. Set aside.
Step 3: Roll out red fondant on a flat surface using the rolling pin to 1/8" thickness. Cut out X’s using the X letter from the alphabet set.
Step 4: Using the large opening of the icing tube, cut out circles. Next, push the drinking straw in the center for create the opening for the "O."
Step 5: Dampen the back of the X’s and O’s with the food safe paint brush dipped in water. Position the letters on the fondant hearts. Set aside.
Icing and Decorating the Cupcakes:
Step 1: Tint the butter cream with a small amount of pink food coloring to create a very pale pink icing. Fill the icing bag with one of the colors of butter cream and fit the opening with a Wilton #1M Star metal tip.
Step 2: Starting from the outside edge of the cupcake, use a circular motion and squeeze the icing out to cover the cupcake.
Step 3: Carefully place an "X" and "O" heart plaque on each cupcake.
