Using this method significantly cuts down the calories of the cupcake! With less ingredients, they tend to bake faster as well...so keep your eye on them!
1 can of diet soda
1 box of your favorite cake mix
Slowly pour soda into the cake mix and stir together. Check batter to make sure its smooth, but not runny. You can use less soda if you need to. Pour into cupcake tins and bake as usual.
Note: In this recipe, you are substituting soda for the eggs, water, and oil/butter. The cupcakes will taste slightly like the soda you used. Dark sodas (diet coke) work better for dark cupcakes and light sodas (diet seven-up, diet sierra mist)work better for lighter cupcakes.
