Banana Cupcakes

Ingredients:

  • 3 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup granulated sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 1 Tbsp vanilla extract
  • 2 egg whites
  • 4 bananas, mashed
Directions:

Step 1: Preheat oven to 375°F.

Step 2: Line two cupcake pans with cupcake liners and set aside.

Step 3: In a large bowl, combine the dry ingredients. Set aside.

Step 4: In separate mixing bowl, mix together sugar, oil, eggs and vanilla. Stir in bananas.

Step 5: Slowly stir in flour mixture.

Step 6: Fill cupcake liners one-half to three-quarters full with batter.

Step 7: Bake for 20 minutes.

Makes approximately 2 dozen "standard" cupcakes.

Coconut Cupcakes

The ingredients for this cupcake recipe is the same as Ina Garten's (“The Barefoot Contessa”) coconut cupcakes. Her directions call for a cream cheese frosting sprinkled with shredded coconut, but you can top them with whatever you like.

Ingredients:

  • 1-1/2 cups (3 sticks) unsalted butter, softened
  • 2 cups sugar
  • 5 eggs
  • 1-1/2 tsps vanilla
  • 1-1/2 tsps almond extract
  • 3 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup buttermilk* (see below)
  • 2-1/2 cups (7oz) shredded coconut
Directions:

Step 1: Line cake tins with liners and set aside.

Step 2: Cream together butter and sugar in a large bowl of a mixer. Add the eggs one at a time, mixing thoroughly after each addition.

Step 3: Stir the extracts into the butter mixture.

Step 4: In a different bowl, sift the dry ingredients together. Add a little flour mixture to your creamed butter mixture alternately with the buttermilk. Begin and end with the dry ingredients. Stir in the shredded coconut.

Step 5: Fill tins with batter almost to the top. Bake in a 325°F oven for 25 – 35 minutes.

Make approximately 20 – 24 standard size cupcakes.

* Buttermilk Substitute: If you don’t have buttermilk, add 1 tablespoon of cider vinegar to 1 cup of milk.


Strawberry Cupcake Recipe

This strawberry cupcake recipe by "Sprinkles" Bakery in Beverly Hills, California is delicious and simple to make.

Ingredients:

  • 1 1/2 cups all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (1 stick) unsalted butter
  • 1 cup granulated sugar
  • 1 large egg
  • 2 egg whites
  • 1/4 cup whole milk
  • 1/4 cup strawberries, pureed
  • 1 tsp vanilla extract
Directions:

Step 1: Preheat oven to 350°F.

Step 2: Line two cupcake pans with cupcake liners and set aside.

Step 3: In a large bowl, stir together flour, baking powder, baking soda and salt. Set aside.

Step 4: In a medium sized measuring cup, stir together milk, strawberry puree and vanilla. Set aside.

Step 5: In a large bowl, cream butter and beat in granulated sugar.

Step 6: Add egg and egg whites. Beat well after each addition.

Step 7: Divide dry ingredients into half. Add first portion of dry ingredients to the butter mixture followed by the strawberry/milk mixture. Finish with the last portion of the dry ingredients. Scrape down sides of bowl occasionally to thoroughly mix ingredients.

Step 8: Fill cupcake liners three-quarters full with batter.

Step 9: Bake for 20 minutes or until toothpick inserted in center comes out clean.

Step 10: Leave in pan for 10 minutes. Remove to wire rack to cool completely.

Makes approximately 2 dozen "standard" cupcakes.
