Easy Chocolate Cupcake Recipe
1 box (19.5oz) chocolate cake mix
1 pkg (4 oz) instant chocolate pudding mix
1 cup water
1/2 cup vegetable oil
Step 1: Preheat oven to 350°F.
Step 2: In a large bowl, stir together cake mix and pudding mix. Add water, oil and eggs. Beat on low speed of your mixer until combined, then on medium speed until well blended (about 1-1/2 to 2 minutes).
Step 3: Pour into cupcake tins lined with baking cups about 1/2 - 2/3 full.
Step 4: Bake for 20 minutes.
Makes approximately 20 "decorator" size small cupcakes.
Magnolia's Chocolate Cupcake Recipe
2 cups all purpose flour
1 tsp baking soda
1 cup (2 sticks) unsalted butter
1 cup granulated sugar
1 cup firmly packed light-brown sugar
4 large eggs
6 oz unsweetened chocolate
1 cup buttermilk
1 tsp vanilla extract
Step 1: Melt chocolate in double-boiler and allow to cool 5 - 10 minutes.
Step 2: Preheat oven to 350°F.
Step 3: Line two cupcake pans with cupcake liners and set aside.
Step 4: Sift together flour and baking soda. Set aside.
Step 5: In a large bowl, cream butter and beat in granulated sugar and brown sugar.
Step 6: Add eggs one at a time. Beat well after each addition.
Step 7: Add chocolate slowly and mix well.
Step 8: Divide dry ingredients into thirds. Stir together buttermilk and vanilla. Add dry ingredients by thirds to the butter mixture alternating with buttermilk/vanilla. Scrape down sides of bowl occasionally to thoroughly mix ingredients.
Step 9: Fill cupcake liners three-quarters full with batter.
Step 10: Bake for 20 - 25 minutes or until toothpick inserted in center comes out clean.
Step 11: Leave in pan for 10 minutes. Remove to wire rack to cool completely.
Makes approximately 2 dozen cupcakes.
